Recipe: Hummus Roasted Whole Cauliflower

This delicious cauliflower dish is such a winner, so much flavour!

It can serve as a fabulous side or as the crown of a main meal with tasty sides like Lebanese Mujadara, grilled asparagus with skordalia or even a ribboned raw zucchini salad with pomegranate! While this dish spends a lot of time in the oven, the effort is low, this dish is beginner easy.

Serves 4 as part of a main meal or 6 as a side

TIPS

  1. Get your hands dirty - to increase flavour, ensure your seasoning is rubbed well in to your cauliflower before baking

  2. A spoon really helps to get plenty of crumb crust on your hummus coating

  3. Allow plenty of time to prepare the dish- the cauliflower spends a total of 85 minutes in the oven, while it’s extremely low effort, you need to allow time

Ingredients

  • whole cauliflower

  • 3 tablespoons of olive oil

  • 300g of hummus (your favourite store-bought or homemade whichever you have on hand)

  • 1 teaspoon ground cumin

  • 1 teaspoon smoked paprika

  • 1 teaspoon garlic powder

  • Salt and pepper to taste

  • 2/3 cup of LSA (linseed, sunflower seed & almond meal)

Method

  • Preheat the oven to 200°C

  • Cut leaves from cauliflower and place whole in a lined baking dish

  • Sprinkle the cauliflower with your cumin and salt of pepper and drizzle with olive oil and rub in evenly

  • Roast in the oven for 45 minutes

  • Mix LSA, smoked paprika, garlic powder and salt and pepper to taste in a small bowl and put aside

  • Bring cauliflower out of the oven, allow it to cool for a few minutes then using a spoon cover the cauliflower with a thick even layer of hummus

  • Follow by pressing your LSA/spice mix in to the the thick hummus layer creating an even crust

  • Drizzle with olive oil and return cauliflower to the oven

  • Bake for a further 30-40 minutes or until tender and the shell is golden-brown, you can test this by skewering through the top.

  • Remove from oven and serve hot

Serve with Lebanese Mujadara and greens with skordalia or an acidic zucchini ribbon salad to balance it out.
